Since I've been on quite a long hiatus...I'll make this short and sweet. Prepare yourselves for the BEST. SNACK. EVVVVVER. AND, it's easy peasy to make!
First, I made my version of mexican salsa: diced avocado, grape tomatoes (cut in half), chopped cilantro, fresh lime juice and a little salt. Put a spoon of salsa on top of low sodium Triscuit crackers. On top of the salsa/crackers, sprinkle part-skim milk mozzarella cheese on top and broil just until the cheese melts and is nice and bubbly.
