I'm BACK! Finally had a long enough break from school to post a new entry! I hope you are all doing well.
This recipe was adapted from a cookbook/calendar I picked up from the Heart and Stroke Foundation (so you KNOW it's pretty healthy!!!) You can use either lemons or limes...I chose lemons.
Here goes...
You will need the following ingredients:
-3/4 cup granulated sugar
-2 Tbsp soft margarine
-Grated rind of 2 lemons (or 3 limes)
-2 eggs, separated
-1/3 cup fresh lemon juice (about 2 medium lemons or limes)
-1/4 cup all-purpose flour
-1 cup low-fat milk (but I didn't have any so used 2% milk)
-Sliced strawberries/whole blueberries
Directions:
In mixing bowl, beat together sugar, margarine and lemon/lime rind.
Beat in egg yolks, one at a time, beating well after each addition.
Beat in lemon (or lime) juice, then flour and milk.
In separate bowl, beat egg whites until soft peaks form. In other words...
from THIS...
...to THIS.
Fold egg whites into batter, and pour into 6 cup (1.5 L) baking dish. Place in larger pan and pour in boiling water to come about 1 inch up sides of pan.
Bake in 350F oven for 40 min.
Spoon berries over top. Serve warm or cold.
